Kale chips are officially the reining king of guilt free snacks! I have to admit I was slightly wary considering these are a common snack of the oh so tiny Victoria Beckham (with her figure it’s hard to believe she eats anything that tastes good). If you are trying to consume less junk food (like me), and especially when potato chips are your weakness (guilty), you might need something to replace your crunch!
So I gave these a go the other day, and I’m happy to report that kale chips are the ultimate champion of healthy snacks!! With all its health benefits, and it’s crunchy texture, you won’t even miss your Humpty Dumpty’s I promise!
The best part about this recipe is that they are super easy to prepare, and so you won’t even have time to second guess your decision not to eat the Doritos. All you need is some freshly washed (and dried) kale, olive oil and some basic spices! Easy right? Also you can adjust your chips to your own individual preference; if you like them super spicy you can always add more cayenne pepper, or conversely you can also scale it back.
Here are some benefits to eating kale in case you weren’t convinced already!
1 bunch Kale, Washed And Dried (well)
2 Tablespoons Olive Oil
Cayenne Pepper To Taste (about a pinch)
Garlic Powder, To Taste
Kosher Salt To Taste
Preheat oven 350ºF and line a baking sheet with parchment paper.
Tear the kale leaves into pieces and place in a large bowl. Make sure your kale is dried really well. If your kale is still wet it will come out wilted and you won’t get the crunch you want.
Toss the kale with olive oil and sprinkle spices, coating evenly.
Arrange the kale in a single layer on a baking sheet.
Bake the kale for 10-15 minutes until crispy, flipping them halfway.
Enjoy immediately. You will want to eat these right away, and not just because they are super yummy, but because they lose their crunch pretty quick.
