Sometimes when I get home from my day I feel so tired that I could just go to bed, and skip dinner all together. Don’t do that, it doesn’t need to be that difficult; having some necessities on hand will make mid-week dinners a lot more delicious and a lot less painful. This recipe is very simple, but don’t let that fool it because it is absolutely delicious.
Ingredients:
- green pepper – sliced
- onion – chopped
- olive oil – (tbs)
- no salt added plum tomatoes
- garlic clove
- olives
- olive paste (tbs)
- capers
- jalapeño peppers (optional)
- whole wheat pasta (your choice)
Directions:
Cook pasta according to directions,
Soften onions and green peppers in a heated deep skillet with olive oil. Add garlic, olives, olive paste, capers, and jalapeño peppers. Cook a few minutes, so flavors blend.
Add plum tomatoes, and increase heat until it has boiled down to half its consistency. Drain pasta and toss in a little bit of olive oil (optional)
Toss vegetable mixture with pasta, and top with fresh Parmesan cheese.
