PERFECT PICNIC RECIPES JUST IN TIME FOR CANADA DAY

This summer President’s Choice and Atlantic Superstore want to encourage Canadians to take advantage of the beautiful weather, and dine al fresco. With this in mind they reached out to me to share some picnic recipes just in time for Canada Day ๐Ÿ™‚

With fresh produce, some clever new products from President’s Choice, of course I gladly accepted the challenge. I’ll pretty much take an excuse to eat outside, so I packed up my loot and made my way to a near by park. If you’re getting together with friends and family this weekend, and you’re trying to think of some fun recipes to try look no further! From a fun twist on a caprese salad to an innovative take on grab-and-go sandwiches, find some perfect picnic recipes just in time for Canada Day below.

PANZANELLA SKEWERS WITH AXIANY TOMATOES AND BOCCONCINI


Full disclosure I did not develop this recipe, but certainly did test it! I love that this recipe can easily be made ahead of time simply just leave the vinaigrette until you’re about to serve!

Slightly sweet the Axiany Tomatoes balance well with the salty olives, and work wonderfully with the crusty sour dough Panzanella bread. Fixing it all on a skewer makes all these ingredients perfectly portable for a picnic!

Also make no mistake that the white cheese and red tomatoes are 100% on purpose for Canada Day snacking ๐Ÿ™‚

INGREDIENTS


Vinaigrette

Half small Shallot, minced

2 TBS red wine vinegar

1/4 cup olive oil

1/4 tsp salt

pinch of black pepper

Skewers

24 cubes (inch/ 2.5 cm) sourdough bread (about 1/12 cups)

2 TBS olive oil

12 PC whole kalamata olive, pitted, halved

12 PC cocktail bocconcini Soft Fresh Cheese, torn into halves

2 jarred PS whole sweet red pepper, each cut into 12 squares

24 PC Axiany Cherry Tomatoes

DIRECTIONS


Preheat oven 400 (200 C)

Prepare vinaigrette: combine shallot, vinegar in a small bowl: let stand 5 mins. Whisk in 1/4 cup of oil, salt and pepper. Set aside.

Prepare skewers: toss the bread with oil in a large bowl, Spread a single layer on parchment paper lined baking sheet. Bake. stirring once, until golden brown (about 10 minutes) Let cool completely.

Meanwhile, stir together olives, cheese, red peppers, 1/4 cup vinaigrette in a seperate bowl: let stand 5 minutes.

Thread 1 piece each with tomato, olive, cheese, red pepper, and bread onto each of the 24 – 6 inch skewers. Arrange on a platter: drizzle with remaining vinaigrette.

Chef’s tip: lightly crush the whole olives with the flat side of the knife to expose the pits- this makes the pits easy to pick out- then cut the olives into halves.

ASIAN SPICED ROAST BEEF LETTUCE WRAPS WITH RADISH


This one isn’t so much of a recipe, but rather a clever way to keep the gluten free or your keto friends and family happy.

I love lettuce wraps they are such a lightweight way to enjoy all your favorite sandwich ingredients and this Red Butter Lettuce is the PERFECT sturdy texture to stuff with goodness.

President’s Choice recently launched a few different types of natural deli meats, and one that I’m super excited about is the Asian spiced roast beef: guys it’s so good. There’s also a lovely Himalayan Spicy Salami that’s spiced with paprika, and garlic that is also veryyyyy delicious.

Perfect for picnics, the Asian Spiced Roast Beef is so flavorful on it’s own you don’t need to worry too much about fussing with sauces (mayo kinda freaks me out when it comes to picnics).

To minimize the prep work for picnics, I love the idea of creating your own wraps when you get there that way you can pop onto the Atlantic Superstore grab your ingredients and you’re pretty much ready to go! Simply pack your Red Bib Lettuce, meat of choice, slice up some fresh radishes for some crunch (SO good) and then mustard! That’s it.

INGREDIENTS

Red Butter Lettuce

PC Asian Spiced Roast Beef

Radishes (sliced)

Old Fashion Dijon Mustard

DIRECTIONS

Add meat, radishes, top with mustard, and eat like a taco!
