Recently I hosted a spa day at my place for some of my girlfriends. We are always so busy running around doing a thousand things at once, but we knew we wanted to get together, but we also wanted to chill. So I rounded up all my face masks, my mani/pedi tools, and made some delicious snacks, and this watermelon mimosa.
Now this recipe is like seriously easy, but it was so pretty I had to share!WATERMELON MIMOSA
INGREDIENTS
1 bottle Mikes Hard Lemonade
1 Bottle Prosecco
Watermelon concentrate (see below)
Club Soda (as needed)
Frozen Fruit (as garnish)
Watermelon Concentrate
5 cups seeded and chopped watermelon
1 cup of water
1 packet of stevia (or sugar, or omit altogether)
1/8 teaspoon salt
DIRECTIONS
For the watermelon Concentrate
Puree the watermelon and water in a blender.
Pour the watermelon puree into a fine strainer set over a bowl. Let it stand for a few minutes until the juice has drained through.
Stir the watermelon gently one or twice, but do not press the puree or the syrup will be cloudy. This will yield about 2 cups of watermelon juice.
Stir in stevia and salt into the watermelon juice until dissolved.
To create Mimosa or watermelon punch
I used two large glass bottles, but you could use a punch bowl very easily as well.
Simply combine the watermelon concentrate, Mikes Hard Lemonade, and top with prosecco. You can make this as strong as you like, or you can add Club soda to bring down the alcohol content it’s totally up to you.
Make sure to pretty it up by adding fresh fruit like lime slices, strawberries, blueberries, raspberries. You can use flute champagne glasses or even mason jars. It’s totally up to you.
And that’s it, like most punches or mimosas there’s no real science behind it, it all just kind of works out lol So feel free to just throw it all together. You really can’t screw it up I promise.
