THE BIG SALAD RECIPE + HOMEMADE DRESSING

Do you remember that episode of Seinfeld when Elaine
orders the big salad? Well this my friends is your key to weight
managing success! When it comes to eating we want to be able to go a lot
of it, am I right? Well the exciting thing is eating healthy or eating
well doesn’t mean starving yourself. Today’s recipe might seem boring,
but I promise you it’s anything but! 

So if you have a cost membership this it’s going to make this a lot easier on you, and not to mention your wallet. Making salads at home can get pricy, but Costco really does have some advantages. For instance, you can purchase precooked chicken, grape tomatoes, spinach, mushrooms, and avocados for some pretty reasonable prices! I guess the only thing that hasn’t been purchased at costco in my salad is the cheese (because I usually buy low fat) and my almond because I love Tamari almonds (which I get at Bulk Barn). If you don’t have a costco membership you might want to consider one, nah I’m just kidding you can always buy your salad stuff at your regular grocery store 🙂 
Don’t be afraid of bringing a honkin’ big salad bowl! I’m pretty sure the container I take my salad in holds like 4 or 5 cups or something? Oh also a salad spinner will make your salad making much much easier.
Okay here’s what goes in…
3 solid handfuls of Spinach (thoroughly washed and dried)
Handful of grape tomatoes 
1/4 cup of grated or cubed Marble, Cheddar, Smoked Cheddar Cheese
1/2 cup Sliced mushrooms 
1/4 – 1/2 an avocado (sliced or cubed)
12-15 almonds (chopped)
Precooked Grilled Chicken (about the size of a desk of cards)
Optional: sprinkle w/ nutritional yeast 
For the salad dressing…
1/4 cup olive oil 
2-3 TBS of Balsamic Vinegar (if you like it add more)
Pinch of oregeno 
Salt and Pepper to taste
Combine in a mason jar (I never measure what goes in, but here’s my best attempt at “measurement” make sure to adjust to taste). If should last you a couple servings. Every couple days or so I just add more olive oil and balsamic vinegar, but I looooooooove balsamic vinegar so much. Like so much that I think I could literally drink it out of the bottle. Anyway this salad dressing is like stupidly easy, and it’s so much better than store bought salad dressing because there’s no preservatives and no excess sugar.
Combine all your salad fixings, and wait to pour your salad dressing on your salad until you’re ready to eat it because otherwise it’ll get super wilty.
This “recipe”, which like I said is hardly a recipe, makes the BEST lunch and everyone at your office is going to be SUPER jealous! Kudos to Nadine and her amazing hubby for sharing all their salad wisdom with me! I’m totally hooked on this salad recipe! Add as many different types of veggies/proteins you want because really anything goes.
