‘MIGHTY KALE’ SMOOTHIE MAKEOVER

Recently I was out shopping with my brother, and we made a pit stop at Jugo Juice to grab some pre-shopping fuel. I ordered the Mighty Kale with an extra shot of wheat grass for some added umph. I loved my smoothie so much that I wanted to try and recreate it at home.

The ‘Mighty Kale’ at Jugo Juice contained, kale, spinach, mango, pineapple, apple juice and tropical nectar. The version I made at home was slightly different than the one sold at Jugo Juice. I made mine a lot less sweet, but that’s how I prefer it; I added honey instead of “tropical nectar” because in my opinion that sounds a lot like sugar and I don’t really want sugar in my smoothie putting a drain on everything else! I also added chia seeds for some added omega 3s.

Please note this batch makes several servings, I froze mine in individual jars, so I could take them to work with me. Simply remove one from the freezer and put in the fridge to thaw out overnight and you should be good to go for the morning.

Ingredients:

1 bunch of Kale (about 5-6 stems removed)
5 cups of spinach
1- 1/2 cups of Frozen mango
1- 1/2 cups of frozen peaches or pineapple
1 TBS honey
1/2 cup – 1 cup of water
1 TBS lemon or lime juice
1 TBS Chia seeds

Directions:

Pour enough water in the blender to cover the blade (and keep some on hand in case you need it to break down the veggies). You could also use coconut water here for some added electrolytes.

Before you start to blend your spinach and kale, place your frozen fruit in a strainer and run some cold water over them to help encourage them to thaw out slightly and set aside.

Start blending the kale (stems removed) first, and blend slowly until all kale is liquified. Adding water as necessary. Do the same with spinach. I’m not lucky enough to own a vitamix, so I find blending in small quanities works best so I don’t smother the blade and end up with a sludge diaster.

Add all remaining ingredients (fruit, honey and lime juice) and blend until smooth.

    I just had a Mighty Kale at Jugo Juice and have been dying to re-create it. This sounds so delicious! I'm going to give it a try tonight! 🙂

    I used a canned pineapple instead of frozen, using the juices instead of water. Deeeelicious. Thanks for posting this!!
