Shortcut Recipes: Protein Powder Pancakes

You know me always trying to make something bad, good for you! I know I know I just can’t help myself. Here we have a traditional favourite breakfast recipe with just a little bit of protein kick. I had heard about others using protein powder in recipes before, but I gotta say I didn’t think of this one. I gotta give credit to the man of house for this one because it was his idea. And a brillant one at that.

Now some people have taken this whole protein pancake business to entirely different level, as they simply combined protein powder with milk and voila: pancakes! But I prefer a more traditional approach let’s face it I’m not about to enter a body building competition, but I do like to eat well too sooooo here’s to a little column A little column B. So here’s what your going to do simply take your old favorite recipe for pancakes and substract as much flour as you add protein yep! It’s that easy. You could take it a step further and just do egg whites if you wanted to cut out even more fat, but I think you need a little bit especially if you are going to be working out so I used whole eggs. Oh yeah, and I subtracted about 1/2 cup of sugar, and used whole wheat flour, and I also used organic soy milk instead of regular (you know the usual).


1 1/2 cups of whole wheat flour
1/2 cup (or two scoops) chocolate protein powder
2 eggs
1/4 cup of sugar
2 tsp baking powder
1/2 tsp salt
1 cup of organic soy or almond milk (I used vanilla)
1 tsp pure vanilla extract
1/4 cup of chocolate chips
Coconut oil for frying


Combine all dry ingredients and set aside.

Combine all wet ingredients and slowly fold into the dry mixture working out all the lumps and bumps. Once combined fold in chocolate chips (optional). If you can refrigerate your pancake batter for a half hour do so! The longer it spends in the fridge the better 🙂 trust me.

Scoop about 1/4 cup of the mixture into a greased pan over medium heat. Wait until small bubbles form on the top of the pancakes and then flip them to cook the other side. 

I used cinnamon and non-fat greek yogurt for topping instead of whip cream and icing sugar. Cinnamon is a great spice to add flavour without the consquences of tradtional sugar! And it has a TON of antioxidents and helps to improve your memory. 

Be fore warned this recipe makes a lot of pancakes! But the good news is you’ll have plenty left over and they make great snacks one their one, or you can put them into the toaster to crisp them up again!
