Spinach and Feta Omlette

On Saturday morning I like to take the time to make a real breakfast. No shakes, no smoothies I like my breakfasts in solid form. 

Start by scrambling one egg and one egg white. 
Add a TBS of water (helps make them fluffy)
Add salt & pep then spinach (washed)

Mix and combine

Pour oil into a heated frying pan, 
The smaller the frying pan the better; makes it easier for flipping just in case you’re not an expert. 

Once the egg on top has settled a bit and it’s not too runny  
Flip to cook the other side. 
Sprinkle half with feta cheese. 
Fold, and serve with fresh slices of toast and tomatoes.
