What’s that? You’re looking for a low glycemic index (i.e. Paleo) gluten free brownie recipe? Oh and one that is super easy to make? WELL do I have just the thing for you!
This recipe was found in the Halifax Metro and I didn’t really do too much to it. Except a couple of ingredient swaps, and also the addition of adding extra chocolate chips on the top which I would STRONGLY recommend! The added crunch at the top was just the thing, or the icing on the cake (as they say). Sorry my jokes are lame; trust me I’m even worse in real life! EEP! Here’s the recipe.
GUILT FREE GLUTEN FREE BROWNIES

Ingredients:
1/2 cup butter or coconut oil
2 oz semi sweet chocolate
2 tbsp molasses
2 large eggs
1/2 tsp vanilla (I used pure maple syrup and doubled it)
Pinch salt
1 tsp cinnamon
1/4 tsp baking soda
1/2 cup + 3 tbsp almond flour ( I used coconut flour)
2 tbsp pure cocoa powder
Directions:
1/4 cup of mini semi sweet chocolate chips (for topping)
Butter an 8-inch square baking dish (or line with parchment paper) and preheat oven to 350 F.
In a glass bowl, melt butter and chocolate in microwave for a minute or two, allow to cool.
Whisk in molasses, eggs, vanilla, salt, cinnamon, baking soda, almond flour and cocoa powder.
Pour into pan. Bake for about 22 – 25 minutes (or just until edges begin to set).
