Ingredients:
3/4 cup apple sauce
1/2 cup white sugar
1/2 cup packed brown sugar
2 omega 3 free run eggs
1 teaspoon vanilla extract (x 2)
1 1/4 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon (x2)
pinch of nutmeg
1/2 teaspoon salt
3 cups rolled oats
1 2/3 cups butterscotch chips
1/2 cup white sugar
1/2 cup packed brown sugar

Optional Alterations:
- For fun sometimes I downgrade the oats about 1/4 cup and replace it with unsweetened coconut.
- Also if wanted to make them vegan you could replace the eggs with a mashed up banana and buy vegan chips.
Directions:
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl combine apple sauce, white
sugar and brown sugar together. Add the eggs and vanilla, beating well.
Stir together the flour, baking soda, cinnamon and
salt. Gradually add the flour mixture to the butter mixture and stir
until blended. Stir in the oats and the butterscotch chips.
Drop by
teaspoonfuls onto a cookie sheet lined with parchment paper.
Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown
