In the mood for something sweet, but too hot to cook a delicious desert? This recipe is so quick and so tasty you’ll want to bring it to all of your summer BBQ’s and potlucks. All you need is three simple ingredients:
|Strawberry Rice Crackers|
- Multi-grain Rice Crackers (Regular)
- Low Fat Strawberry Cream Cheese
- Fresh strawberries/ raspberries / blueberries
Simply spread the rice crackers with the cream cheese, and top with your desired fruit. I like the strawberries cut in halves because you can form them into a little heart shape. You don’t have to be that fancy; you could just throw them on and they’d still look great. And since strawberries and blueberries are in season now they are super cheap, and probably hanging around in your refrigerator anyway.
This is also a peanut/gluten free recipe, so it’s great for kids with allergies and sensitivities.
Warning: DO NOT make these too far in advance because the rice cracker will soften. If you are bringing these along with you somewhere; just bring the ingredients and whip them up upon arrival. You could even add little sprigs of fresh mint as garnish. Super easy, and super yum!
