Yeah French Toast
Ingredients:
- 4-6 slices of whole wheat bread cut in half (on a diagonal)
- 3-4 eggs
- 1 tsp vanilla
- 1tsp cinnamon
- 1 pkg splenda
- pinch of salt
- splash of milk (approx. 2 table spoons)
- margarine/ butter for cooking
top with:
- icing sugar
- cinnamon maple syrup
- berries
Directions:
Break eggs into a shallow dish, whisk with milk, vanilla, cinnamon, salt, and sugar
Heat skillet over med-low heat, and melt butter or margarine (salt free blue menu) coat surface.
Places pieces of bread in the egg mixture coating both sides one at a time for a few seconds. Only coat as many as you can cook at one time (they’ll get mushy).
Transfer to the skillet/grill heating slowly until bottom is golden, and then flip to cook the other side. To get the middle part crispy I stand them up, so they cook the edge. It looks kind of funny, but the end result is a win.
Serve hot topped with berries and icing sugar.
In a small dish mix cinnamon with syrup and serve on the side.
