RECIPE: VEGETARIAN LENTIL “MEATBALLS”

I love this lentil “meatball” recipe! You can add these delicious little nuggets to anything: pasta, buddah bowls, salads, roasted veggies, or mashed potatoes or mashed cauliflower. AN-Y thing! I like to make a big batch, and then just pop them into any meal hot or cold.

Hearty and filling these lentil ‘meatballs’ are such a great addition to any meal, or alone as a snack!

I’m not a vegetarian or anything, but I do fully appreciate the toll eating meat (at the rate we do) is taking on our planet. I love all food, and I actually do enjoy vegetarian, as well as vegan meals. Sometimes I have full vegetarian days, or vegan days, and tbh I don’t even notice a big difference, but I feel great!

I do think that if we all ate a few more vegetarian meals it could really offset the environmental footprint we’re leaving by eating SO much meat ALL the time.

Vegetarian meals can be yummy too, and they don’t need to be complicated either. I love that this recipe because it’s easy peasy, and can be made in a big batch to be enjoyed in a multitude of ways!



**Full disclosure I used up all my green lentils for this recipe, so I took the photo above with red lentils. I’ve not tried this recipe with red lentils.

VEGETARIAN LENTIL “MEATBALLS” RECIPE


2 tablespoons 
olive oil + 1 tsp
3 cloves garlic, minced
1 shallot, minced
1 ½ cups green lentil, cooked (300 g)
1 egg
1 tablespoon 
tomato paste
¼ cup fresh italian parsley, chopped (10 g)
⅓ cup grated parmesan cheese (35 g) or nutritional yeast
1 tablespoon oats (pulsed)
1 ½ tablespoons 
Italian seasoning
salt, to taste
pepper, to taste


DIRECTIONS


PREHEAT oven to 375˚F (190˚C).

BROWN SHALLOTS & GARLIC Heat a large skillet over medium heat then add 1 TBS of olive oil, shallots and garlic

SAUTE for 2-3 minutes, or until slightly golden brown then remove from heat.

COMBINE INGREDIENTS IN A FOOD PROCESSOR add garlic and shallot, green lentils, egg, 1 teaspoon of olive oil, tomato paste, parsley, Parmesan, bread crumbs, Italian seasonings, salt, and pepper and pulse, mixing until just combined.

TRANSFER THE MIXTURE TO A BOWL, and scoop out balls of mixture then carefully form into balls.

USING parchment paper-lined baking sheet BAKE for 10-15 minutes.

COOL for 5-10 minutes & ENJOY

(Serve with ANYTHING or enjoy on their own).

 

** Feel free to switch things up too in your recipe, you can try adding other veggies, maybe some beans! There’s so many options.
