It’s Christmas morning, and you’re bright-eyed and bushy-tailed with excitement. While you REALLY want to make something extra special for Christmas breakfast, you’d probably rather spend your time with your family than tied up in the kitchen.

You’re in luck because I have just the recipe for you! Today, I’m sharing an ah-mazing dish that’s not only healthy but one you can also prep ahead of time so it’s ready on Christmas morning. All you need to do is put it in the oven and set a timer. It’s that easy!

Also, did I mention it’s jam-packed with nutrients AND veggies?? It’s a win-win for everyone. Eggs and veggies really are the perfect pairing. Studies actually show that our bodies better absorb nutrients from veggies when eggs are eaten with them!

Whether you’re feeding your family or a house full of holiday guests, this crowd-pleasing dish is certain to make everyone happy (and give you more time to spend with your family).

I love a good oven recipe. I mean, it basically does all the hard work for you. “Bake it and forget it” is basically my level of commitment when it comes to Christmas morning. For this Festive Egg Bake Recipe, all you need to do is combine all the ingredients together, toss them into a greased pan, and you’re done! It couldn’t be easier and it’s packed with vitamins!

With key nutrients like iron, folate, choline and vitamin B12, and 13 grams of protein per serving of two eggs, they provide the energy needed to keep you going. Eggs are one of the few foods considered to be a complete protein because they contain all 9 essential amino acids. “Essential” means that our body can’t synthesize them from other components, which is why we really should include them in our diet. Amino acids are considered the “building blocks for the body” because they help form protein.

In addition to giving you energy, your body uses the protein found in eggs to:
→ build and repair body tissue and cells
→ grow strong hair and nails
→ build and maintain healthy muscles
→ help fight infections
→ help keep your body fluids in balance

FESTIVE EGG BAKE RECIPE


Customize this recipe with your favorite veggies, and bake with eggs for a nutritious holiday meal!

INGREDIENTS


12 large eggs
1 small onion, diced
1 bell pepper, diced
1 cup cherry tomatoes (or two large tomatoes, chopped)
2 cups kale or spinach
1/2 cup cheese (I use Cheddar)
1 cup milk*
salt + pepper, to taste
Spices (optional: garlic powder, onion powder, paprika, and chili flakes)
olive oil or butter (as needed)

DIRECTIONS


Grease a large casserole pan with oil or butter.
Preheat oven to 400 degrees F.

Add oil to a pan and stir in onion. Cook until translucent (about 3 mins)
Add in bell pepper and cook for one more minute.

Crack eggs into a large mixing bowl or measuring up. Whisk well.

Add in milk and stir.

Add egg mixture to your greased pan.

Add in cooked onion and bell peppers, tomatoes, kale, cheese and salt and pepper and gentle submerge  to combine.

Bake for 30 mins or until cooked all the way through.

Let stand for 10 minutes before cutting in.
