Shortcut Recipe: Avocado Deviled Eggs



I love this recipe because it takes an old favorite and makes it healthier! Which as you know blog reader is music to my little health nut ears! I served these little guys at a potluck I hosted last weekend for some of my favorite dance peeps 🙂 and they were super easy and took no time at all to prepare. I would definitely make them again!

This recipe does not call for mayonnaise (win) and subs in the healthy fat of avocado and the protein of Greek yogurt. Egg whites are a great way to get protein without all the calories. One egg white only has 16 calories making these little devils very low in fat, but still high in protein. I like that this recipe only needs two of egg yolks which removes a substantial amount of fat making this a very healthy (but still filling) snack. Avocado is high in fat, but it’s a good fat, so although it’s the same as a Snickers bar your body metabolites it much better. Also avocados have SO many other health benefits that it completely out weighs (no pun) the high fat content. 



Avocado Deviled Eggs


6 hard-boiled eggs, peeled
1 ripe avocado

1/2 tsp lime juice

1 tsp onion powder

1 Tbsp finely chopped cilantro

1 tsp garlic powder
pinch of cayenne pepper
pinch of paprika

Fresh ground pepper

Kosher salt

 to taste

1 TBS Greek yogurt (plain)

Cut cooled eggs in half and gently remove yolks (keep two and discard the rest). Place the egg white halves on a platter or plate. Mash avocado and (2) egg yolks in a small
bowl. Squeeze in the lime, add seasonings and yogurt to combine. 

Spoon mixture into
egg whites and sprinkle with cilantro. Keep eggs refrigerated until ready to serve.
