Candy Cane Cookies

Not sure what to do this afternoon??

Why not make these scrumptious little festive treats. Bust out the Christmas tunes, and fire up the oven because these cookies are going to fill your house with holiday cheer.

I love love peppermint candy canes, so I decided to use this recipe to make some Candy Cane Cookies. Now it was my first time we the recipe, so it was a little bit awkward. It’s always awkward the first time.

While I was making these cookies I wished that there was an iPhone app for savings smells because I wanted you to be able to smell these amazing cookies. Smells aside, I will say that these directions are rather unusual, why would one preheat the oven to 375 if the batter needs to be refrigerated for an hour? That would mean that your oven is on at least an hour, not including the time it took you to throw it all together.

Also where do I find crushed candy canes? I looked everywhere, in the midst of chewy, cherry, and soda pop flavored candy canes I was lucky to find some peppermint canes at the superstore. I’m not sure if crushed candy canes come prepackaged, but if they don’t then someone should get on that. It’s a pain to peel them and then crush them up yourself; I would pay more for someone else to do all the work. I wasn’t sure what to do because the recipe never specified, so I literally took them out of the wrappers that stuck to my hands like glue, then I put them in a ziplock bag, and smashed them with a hammer: voila modern day Martha.

Alterations:
I used 1/2 apple sauce and 1/2 low fat margarine
I also used Splenda instead of sugar 🙂

I will say though that these cookies were deeeeeeelicious, the minty batter combined with the crunchy top: yum! It certainly passed the test for my taste testers; when I offered them to my sister and her boyfriend they immediately wanted another. Be prepared to make another batch, these cookies go fast!!

    They are amazing the mint extract in the dough makes this cookies so much tastier than they look.
